Bacon-Wrapped Asparagus Bundles
Wrapping the bacon in a tight spiral around 3-4 asparagus spears at a time, rather than one spear per slice, is what lets the bacon fully crisp before the asparagus overcooks.

Ingredients

- 8 slices bacon
- salt and pepper to taste

Preheat oven to 400°F and line a baking sheet with parchment paper.

Divide the asparagus into bundles of 3-4 spears each.

Wrap one slice of bacon tightly in a spiral around each bundle — bundling several spears together like this, instead of wrapping bacon around a single thin spear, gives the bacon enough surface area and cook time to crisp fully before the thin asparagus has a chance to overcook and turn mushy.
