Homemade Fruit Leather

Rolling the parchment paper around the fruit leather while it's still slightly warm is what lets it curl into a neat roll instead of cracking once it's fully cooled and rigid.

Ingredients

  • 4 cups fresh strawberries (or any berries)
  • 1 tbsp lemon juice
  • 1 tbsp allulose (optional, for sweetness balance)

Method

  1. 1

Blend strawberries, lemon juice, and allulose until completely smooth.

  2. 2

Preheat oven to 170°F (or the lowest setting) and line a baking sheet with parchment paper.

  3. 3

Pour the puree onto the parchment and spread into a thin, even layer, about 1/8-inch thick.

  4. 4

Bake 4-6 hours, until the center is no longer tacky and the leather is fully dried.

  5. 5

While still slightly warm, roll the parchment paper up together with the fruit leather — rolling it warm like this is what lets it curl into a neat roll instead of cracking apart once it's fully cooled and stiff. Slice into strips once cooled.
