Ingredients

  • 1.5 cups pitted Medjool dates
  • 1 cup raw cashews
  • 1/2 cup unsweetened shredded coconut
  • 1 tsp vanilla extract
  • pinch of salt
  • extra shredded coconut for rolling

Method

    Pulse the cashews in a food processor until finely chopped, then add the dates, shredded coconut, vanilla, and salt.

    Process continuously, stopping to scrape down the sides, until the mixture starts to clump together into a rough ball.

    Pinch a small amount between your fingers — if it holds together and feels sticky rather than crumbly, it's ready; this 'sticky ball test' is the real sign the dates have broken down enough to bind everything without any oats or flour added.

    Roll into 16 small balls, then roll each one in extra shredded coconut while still sticky.
