Coconut Cashew Energy Bites
Processing the dates and cashews until the mixture clumps together and sticks to itself when pressed — the 'sticky ball test' — is how you know it's blended long enough to hold as bites without any oats or flour.

Ingredients
- 1.5 cups pitted Medjool dates
- 1 cup raw cashews
- 1/2 cup unsweetened shredded coconut
- 1 tsp vanilla extract
- pinch of salt
- extra shredded coconut for rolling

Pulse the cashews in a food processor until finely chopped, then add the dates, shredded coconut, vanilla, and salt.

Process continuously, stopping to scrape down the sides, until the mixture starts to clump together into a rough ball.

Pinch a small amount between your fingers — if it holds together and feels sticky rather than crumbly, it's ready; this 'sticky ball test' is the real sign the dates have broken down enough to bind everything without any oats or flour added.

Roll into 16 small balls, then roll each one in extra shredded coconut while still sticky.
