Ingredients

  • 1 cup rolled oats (gluten-free)
  • 1/2 cup almond butter
  • 1 tbsp culinary-grade matcha powder
  • 3 tbsp allulose or sugar-free maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened almond milk

Method

    Sift the matcha powder through a fine mesh strainer directly into the mixing bowl — matcha clumps easily straight from the tin, and sifting it first is what prevents little bitter green pockets from ending up concentrated in random bites instead of distributing evenly through the whole batch.

    Add oats, almond butter, allulose, vanilla, and almond milk to the sifted matcha.

    Mix until a thick, evenly colored dough forms.

    Chill 15 minutes, then roll into 16 small balls.
