Ingredients

  • 1 cup unflavored or vanilla protein powder (dairy-free)
  • 1/4 cup cold unsweetened almond milk
  • 1/2 cup almond butter
  • 1/4 cup allulose or sugar-free maple syrup
  • 1 cup rolled oats (gluten-free)
  • 1/4 cup dairy-free chocolate chips

Method

    Whisk the protein powder into the cold almond milk first, in its own small bowl, until completely smooth — protein powder clumps up instantly if it's dumped straight into a bowl of other thick ingredients, and mixing it into the liquid alone first is what keeps it silky instead of leaving dry little balls throughout the finished bars.

    In a separate bowl, warm the almond butter and allulose until smooth.

    Combine the protein mixture, almond butter mixture, and oats, mixing until evenly combined.

    Fold in chocolate chips.

    Press firmly into a parchment-lined 8x8 pan, chill at least 1 hour, and slice into bars.
