- 1 cup rolled oats (gluten-free)
- 1/3 cup canned pumpkin puree, blotted dry
- 1/3 cup almond butter
- 3 tbsp allulose or sugar-free maple syrup
- 1 tsp pumpkin pie spice

Spread the canned pumpkin puree onto a few layers of paper towel and press gently with more paper towel on top to blot out excess water — canned pumpkin holds a surprising amount of water, and this blotting step is what keeps the finished bites firm instead of falling apart mushy in your hand.
