Ingredients

  • 1 cup rolled oats (gluten-free)
  • 1/3 cup canned pumpkin puree, blotted dry
  • 1/3 cup almond butter
  • 3 tbsp allulose or sugar-free maple syrup
  • 1 tsp pumpkin pie spice
  • pinch of salt

    Spread the canned pumpkin puree onto a few layers of paper towel and press gently with more paper towel on top to blot out excess water — canned pumpkin holds a surprising amount of water, and this blotting step is what keeps the finished bites firm instead of falling apart mushy in your hand.

    Mix the blotted pumpkin with oats, almond butter, allulose, pumpkin pie spice, and salt until a thick dough forms.
