Chocolate Coconut Bars
Freezing the coconut filling completely solid before dipping it in chocolate is what keeps the layers distinct and clean-cut instead of the filling smearing into the chocolate coating.

Ingredients
- 2 cups unsweetened shredded coconut
- 1/3 cup coconut oil, melted
- 1/4 cup allulose or sugar-free maple syrup
- 1 tsp vanilla extract
- 8 oz dairy-free dark chocolate (sugar-free), chopped

Mix shredded coconut, melted coconut oil, allulose, and vanilla together until well combined.

Press the mixture firmly into a parchment-lined loaf pan, smoothing the top evenly.

Freeze the coconut filling completely solid, at least 1 hour — freezing it firm all the way through first is what keeps the layers distinct and clean-cut once dipped; a soft, only-chilled filling smears into the melted chocolate instead of holding its shape.

Once solid, lift out and slice into bars, then melt the chocolate and dip each bar to coat completely.

Return to the freezer for 10-15 minutes until the chocolate hardens, then store in the fridge or freezer.
