- 1 cup pitted Medjool dates
- 1/2 cup raw cashews
- 2 tbsp chia seeds
- 1 tsp vanilla extract

Soak the dried goji berries in warm water for 10 minutes, then drain well — dried goji berries are quite tough and chewy on their own, and this brief soak softens them enough to actually break down smoothly in the food processor instead of leaving tough little chewy bits scattered through the finished bites.
