Ingredients

  • 1 cup almond flour
  • 1/2 cup unflavored or vanilla protein powder (dairy-free)
  • 1/3 cup almond butter
  • 3 tbsp allulose or sugar-free maple syrup
  • 2 tbsp unsweetened almond milk
  • 1 cup unsweetened shredded coconut, toasted

Method

    Toast the shredded coconut in a dry skillet over medium heat 2-3 minutes, stirring constantly, until golden, then let cool.

    Mix almond flour, protein powder, almond butter, allulose, and almond milk into a thick, cohesive dough.

    Roll into 16 small balls.

    Immediately roll each ball in the toasted coconut while the outside is still tacky — coating them right away like this, before the surface dries or firms up, is what makes the coconut actually stick in an even layer instead of flaking off later.
