Ingredients

  • 1 cup raw cashews
  • 1/4 cup unsweetened shredded coconut
  • 1 tbsp fresh lemon juice
  • pinch of salt

    Soak the dried apricots in warm water for 10 minutes, then drain well and pat dry — dried apricots are quite firm and leathery straight from the bag, and this soak softens them enough to actually blend into a smooth paste instead of leaving tough, chewy chunks scattered through the bars.

    Pulse the cashews in a food processor until finely chopped.

    Add the softened apricots, shredded coconut, lemon juice, and salt, processing until the mixture clumps into a sticky dough.

    Press firmly into a parchment-lined 8x8 pan.
