Frozen Banana Bites with Dark Chocolate
Freezing the banana slices completely solid before dipping is what keeps them from turning to mush the moment they touch the warm melted chocolate.

Ingredients
- 3 ripe bananas, sliced into rounds
- 1 cup dairy-free dark chocolate chips (sugar-free)
- 1 tbsp coconut oil
- chopped nuts or shredded coconut for topping (optional)

Arrange banana slices on a parchment-lined tray and freeze completely solid, at least 2 hours — freezing them fully solid first is what keeps the banana from turning to mush the instant it touches the warm melted chocolate; a barely-chilled banana just falls apart.

Melt the dairy-free chocolate chips with coconut oil in a double boiler or in short microwave bursts, stirring until smooth.

Working quickly, dip each frozen banana slice halfway into the melted chocolate.

Sprinkle with chopped nuts or coconut immediately, before the chocolate sets.

Return to the freezer for 10-15 minutes until the chocolate hardens.
