Ingredients

  • 1 cup pitted Medjool dates
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • pinch of salt
  • pinch of allulose (optional, for extra sweetness)

Method

    Toast the pecans in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until fragrant and slightly darkened — this toasting step is what gives these bites their rich, roasted pecan pie flavor; skipping it and using raw pecans straight from the bag leaves the finished bites tasting comparatively flat and one-dimensional.

    Let the toasted pecans cool slightly, then pulse in a food processor until finely chopped, reserving a few tablespoons of chopped pecans for rolling.
