Pecan Pie Energy Bites
Toasting the pecans before blending them in is what gives these bites their rich, roasted pecan pie flavor — raw pecans taste comparatively flat and one-dimensional.

Ingredients
- 1.5 cups raw pecans
- 1 cup pitted Medjool dates
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- pinch of salt
- pinch of allulose (optional, for extra sweetness)

Toast the pecans in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until fragrant and slightly darkened — this toasting step is what gives these bites their rich, roasted pecan pie flavor; skipping it and using raw pecans straight from the bag leaves the finished bites tasting comparatively flat and one-dimensional.

Let the toasted pecans cool slightly, then pulse in a food processor until finely chopped, reserving a few tablespoons of chopped pecans for rolling.

Add the dates, cinnamon, vanilla, salt, and allulose if using, processing until the mixture clumps together into a sticky dough.

Roll into 14 small balls, then roll each one in the reserved chopped pecans.
