Almond Butter Stuffed Dates

- 16 Medjool dates, pitted
- 1/2 cup almond butter
- flaky salt
- 2 tbsp crushed almonds (optional)

Slice each date lengthwise on one side and remove the pit, without cutting all the way through.

Warm the almond butter for 10-15 seconds in the microwave, just until it loosens slightly — softening it this way makes it easy to pipe or spoon neatly into the dates instead of tearing the delicate fruit trying to stuff it with cold, stiff almond butter.

Fill each date with about a teaspoon of the softened almond butter.

Sprinkle with flaky salt and crushed almonds if using.
