Baked Cinnamon Apple Chips

Slicing the apples paper-thin with a mandoline, not a knife, is what lets them dehydrate into crisp chips instead of staying chewy and leathery.

Ingredients

  • 3 apples, cored
  • 1 tbsp cinnamon
  • pinch of allulose (optional)

Method

  1. 1

Preheat oven to 200°F and line two baking sheets with parchment paper.

  2. 2

Using a mandoline, slice the apples into paper-thin, uniform rounds — this even, very thin slicing is what lets the chips dehydrate all the way through into a crisp texture; slices cut by hand with a knife tend to be too thick and stay chewy and leathery instead.

  3. 3

Arrange the slices in a single layer without overlapping, and sprinkle with cinnamon and allulose if using.

  4. 4

Bake 2-2.5 hours, flipping once halfway through, until fully dried and crisp.

  5. 5

Let cool completely on the sheet — they crisp up further as they cool.
