No-Bake Granola Bars
Pressing the mixture firmly and evenly into the pan with the bottom of a measuring cup is what keeps the bars from crumbling apart when sliced.

Ingredients
- 2 cups rolled oats (gluten-free)
- 1/2 cup almond butter
- 1/3 cup allulose or sugar-free maple syrup
- 1/4 cup unsweetened dried cranberries
- 1/4 cup chopped almonds
- 1 tsp vanilla extract
- pinch of salt

Warm the almond butter and allulose together in a small saucepan over low heat until smooth and pourable, about 2 minutes.

Stir in vanilla and salt, then pour over the oats, cranberries, and almonds in a large bowl, mixing until evenly coated.

Press the mixture firmly and evenly into a parchment-lined 8x8 pan, using the flat bottom of a measuring cup to compact it tightly — this firm, even pressing is what holds the bars together; a loosely packed mixture just crumbles apart the moment you try to slice it.
