Creamy Caesar Dressing (Dairy-Free)
Mashing the raw garlic into a paste with the flat side of a knife and a pinch of salt, rather than mincing it, is what distributes its flavor evenly through the dressing instead of leaving sharp, overpowering bites of garlic.

Ingredients
- 1 garlic clove
- 1/2 cup dairy-free mayonnaise
- 2 tbsp fresh lemon juice
- 1 tbsp capers, finely chopped
- 1 tsp Dijon mustard
- 2 tbsp nutritional yeast
- 1/4 tsp black pepper
- water to thin as needed

Place the garlic clove on a cutting board, sprinkle with a pinch of salt, and mash it repeatedly with the flat side of a knife until it forms a smooth paste — mashing it this way, rather than mincing it into small pieces, is what distributes the garlic flavor evenly throughout the dressing instead of leaving sharp, overpowering bites in random spots.
