Ingredients

  • 1 cup unsweetened coconut milk (carton, not canned)
  • 1/2 cup plain dairy-free yogurt
  • 1 cup frozen mango chunks
  • 1 cup frozen pineapple chunks
  • juice of 1/2 lime

Method

    Add coconut milk, yogurt, and lime juice to the blender and blend briefly on low to get the liquid moving.

    With the blender still running on low, add the frozen mango and pineapple gradually — adding frozen fruit into already-moving liquid like this, rather than dumping it in all at once from a stopped blender, is what prevents the blades from jamming against a solid block of ice; a stationary blender full of hard frozen fruit can stall the motor or leave chunks unblended.

    Increase speed to high and blend until completely smooth and thick.
