Cucumber Mint Green Juice
Muddling the mint leaves lightly before juicing is what releases their essential oils into the juice, giving a far more pronounced mint flavor than leaves that go through the juicer whole and mostly intact.

Ingredients
- 2 cucumbers, chopped
- 2 celery stalks
- 1 green apple, cored
- 1/2 lemon, peeled
- 1/4 cup fresh mint leaves

Muddle the mint leaves lightly in the bottom of a glass or bowl with the back of a spoon before juicing — this light muddling bruises the leaves just enough to release their essential oils into the juice, giving a far more pronounced mint flavor than whole leaves that pass through the juicer mostly intact.

Feed the cucumber, celery, apple, and lemon through a juicer, alternating firmer produce with the muddled mint leaves to help push everything through efficiently.

Stir the finished juice to combine.

Strain through a fine mesh sieve if a smoother, pulp-free texture is preferred.
